  • 1 cup active sourdough starter

Part 1: Mixing the Dough

2. Add Flour and Salt: Gradually add the bread flour and salt to the starter mixture. Mix until a dough forms.

3. Knead the Dough: Turn the dough out onto a floured surface and knead it for about 10 minutes, or until it becomes smooth and elastic.

4. Add Honey and Olive Oil: Incorporate the honey and olive oil into the dough. Knead for an additional 2-3 minutes to ensure even distribution.

5. First Rise: Place the dough in a lightly greased bowl, cover it with a damp cloth, and let it rise at room temperature for 6-8 hours, or until it doubles in size.

Part 2: Shaping and Second Rise

6. Prepare the Loaf Pan: Grease a 9x5-inch loaf pan and set it aside.

7. Shape the Dough: After the first rise, punch down the dough to release excess air. Shape it into a rectangle that's roughly the width of the loaf pan.

8. Second Rise: Place the dough into the greased loaf pan. Cover it with a damp cloth and let it rise for an additional 2-4 hours, or until it reaches the top of the pan.

Part 3: Baking the Bread

9. Preheat the Oven: Preheat your oven to 375°F (190°C) while the dough is in its final rise.

10. Brush with Milk: Gently brush the top of the loaf with milk. This will give it a golden crust.

11. Bake: Place the loaf pan in the preheated oven and bake for 30-35 minutes or until the bread is golden brown and sounds hollow when tapped on the bottom.

12. Cool and Slice: Allow the bread to cool in the pan for a few minutes, then transfer it to a wire rack to cool completely. Once cooled, slice and enjoy your homemade sourdough sandwich bread!
